Dinner is more than just a meal. It’s a time when family members can come together. To share their day’s experiences. To give thanks for all they have.

It also provides an opportunity for good friends to catch-up. And what better way to do this than over the few hours it takes to prepare and eat dinner.

Cooking for me is quite a recent phenomenon. But we are very fortunate to have access to so many cooks willing and eager to teach us everything from the basics to cordon-bleu.

And the one thing that I’ve learned is that making dinner can be as simple or as complex as you want it to be.

Personally, on my own, I much prefer simple. Too many ingredients and I’m liable to omit one or two. Too many steps and I’m likely to skip one or two.

But if someone else is helping in the kitchen then it’s more about sharing the occasion. In this case, my four favourite dinners are all roasts:

1. Roast beef with Yorkshire pudding | Jamie Oliver has “the best” recipe for this traditional dish.

2. Roast Lamb | pretty easy to do this using the BBQ as an oven.

3. Roast Chicken in milk | another genius Jamie Oliver recipe.

4. Roast Pork | get the crackling right, add some apple sauce, and you’re onto a winner.

All should be served with lots and lots of roast vegetables for a wonderful, winter feast.
