There’s something about mushrooms that I’ve always enjoyed.

Neither a vegetable nor a meat, they are a good source of vitamin B and some essential minerals including copper and potassium.

In a salad, raw, they generally taste too mild for my liking.

But cook them with a little butter and they burst into life. This is my preferred way to eat them.

Add a couple of pieces of wholemeal toast and you have yourself the perfect, easy-to-make, weekend breakfast.

And I’m in real luck. There’s a huge variety of mushrooms available to choose from in Tokyo.

Mmm. My mouth is watering just thinking about it.

  1. For a wonderful treat my brother used to do the following: Cook bite size mushrooms pieces in butter or even an extra olive oil/butter mixture. Throw in spices like parika,salt pepper and minced garlic. After the mushrooms are cooked for at least 10-15 minutes add equal amounts of Kikomans Terriaki baste and glaze and 1/2 & 1/2 or cream. Just a little of each. EAT. I made these for a few friends a couple of times and they devoured them.
